Butternut Squash Mash
Meal: Side Dish
Prep Time: 35 Minutes
Cook Time: 60 Minutes
Ingredients:
- 2 large butternut squash
- 2 cloves garlic
- 2 tbsp butter
- 1/2 cup coconut milk
- 1 tbsp sage leaves [optional]
- 2 tsp sea salt
- 1 tsp black pepper
Directions:
- Peel squash, cut in half, remove seeds. Cube squash
- Boil water, add cubed squash. Boil 20 minutes or until tender, drain squash.
- Combine squash with garlic, butter, coconut milk, salt and pepper. Mix with electric mixer on medium speed until smooth. Garnish with sage.
- Enjoy.
