Basics
For time:

Roasted Green Beans

1 lb green beans
1 Tbs olive oil
1 Tbs thyme

  1. Preheat oven to 350℉.
  2. Wash and chop ends off beans.
  3. Place in a roasting pan, drizzle with olive oil and sprinkle with thyme.
  4. Toss until coated well and roast for 20 minutes.
  5. Check occasionally and toss several times

Tasty Rating: 7

Although not a super high rating (veggies are hard to rate as high as Paleo muffins!), this is a good go-to for a side dish.  I cycle through these quite often.  If you are thinking, “Hey, green beans are a bean!  That’s not Paleo!!!”  Before you have a heart attack, green beans as well as sugar snap peas are good because they are low in the toxins beans have since they aren’t fully mature (out of the pod).  So, enjoy this bean because it’s Paleo.
