Wheat Belly Book
I have recently read the book Wheat Belly and would highly recommend it for people who are new to paleo or for people who have been doing it for years like we have. It is written by Dr. Davis who has celiac disease. He has gone into detail on specifics of the genetic modification of wheat over the years, the issues with the celiac tests, as well as all of the bodily issues that come from consuming our modern day wheat.
One impressive thing I took out of it was a strain of wheat that has been saved from modification called Einkorn wheat. The author did a study on himself to see if his celiacs would act up while consuming this strain of wheat. Surprisingly he had no effects from eating this Einkorn wheat, but when he went to consume traditional ‘whole wheat’ bread, he was sick for days. You can purchase this Einkorn wheat here. Another very important thing to take from this book is how inconclusive the celiac test is. Just because you or your child have had the test and it comes back negative, doesn’t mean that you/they don’t have a reaction to gluten. You may not have the stomach issues, but do you get migraines? Do you have a rash, eczema, psoriasi? Do you have acne? Do you have join pains? All of these are signs of wheat issues.
